To grow the specialty apples in this cider, Phonograph took cuttings from their favorite cider apple trees. They grafted every tree to create an orchard specifically to make these ciders. The apples in this cider include: Dabinett, Ellis Bitter, Harry Masters Jersey, Chisel Jersey, Rhode Island Greening, and Ben Davis.
Phonograph works with orchards located in Upstate New York, between the Fingerlakes and Lake Ontario. Phonograph cider comes from a traditional winemaking approach with some contemporary cidermaking techniques woven in. The fruit is pressed fresh in the fall at peak ripeness, on a rack and cloth press that has been in use for nearly 100 years, and fermented in the Fingerlakes town of Romulus during the cool autumn and winter.
